Ingredients
The following ingredients have 4 Servings
- 1 1/2 cups cooked pearled farro
- 3 pieces cooked diced pancetta or bacon
- 1/4 cup chopped red onion
- 2 cloves garlic, (minced)
- 1 tablespoon chopped fresh rosemary
- 8 cups chicken broth
- 1 cup diced fresh tomatoes
Instruction
- Chop the pancetta or bacon into small pieces; then cook over medium heat in a Dutch oven until cooked through.
- Next, add the onions, garlic and rosemary and saute for 1-2 minutes; then add the chicken broth and tomatoes. Mix well.
- Bring the soup to a boil, add the cooked farro; then cover, lower heat and allow to simmer for 15 minutes.
