Ingredients

The following ingredients have 4 Servings
  • 1 1/2 cups cooked pearled farro
  • 3 pieces cooked diced pancetta or bacon
  • 1/4 cup chopped red onion
  • 2 cloves garlic, (minced)
  • 1 tablespoon chopped fresh rosemary
  • 8 cups chicken broth
  • 1 cup diced fresh tomatoes

Instruction

  • Chop the pancetta or bacon into small pieces; then cook over medium heat in a Dutch oven until cooked through.
  • Next, add the onions, garlic and rosemary and saute for 1-2 minutes; then add the chicken broth and tomatoes. Mix well.
  • Bring the soup to a boil, add the cooked farro; then cover, lower heat and allow to simmer for 15 minutes.
