Ingredients

The following ingredients have 8 Servings
  • 1-2 zucchini (thinly sliced on a mandolin)
  • 1/4 - 1/2 cup edamame hummus (or other hummus)
  • handful mint
  • 1 avocado (thinly sliced)
  • 4 ounces chicken or turkey cold cuts (cut into small pieces)
  • 1-2 small English cucumbers (peeled and cut into matchsticks)

Instruction

  • Place thinly sliced zucchini side by side on paper towels. Lightly salt to allow zucchini to sweat. Let sit for 15 minutes and pat dry with paper towels.
  • Top each zucchini slice with spoonful of hummus, a few cucumber matchsticks, mint leaf, piece of chicken or turkey, and piece of avocado.
  • Roll tightly up.
  • Repeat with remaining ingredients.
