Ingredients
The following ingredients have 8 Servings
- 1-2 zucchini (thinly sliced on a mandolin)
- 1/4 - 1/2 cup edamame hummus (or other hummus)
- handful mint
- 1 avocado (thinly sliced)
- 4 ounces chicken or turkey cold cuts (cut into small pieces)
- 1-2 small English cucumbers (peeled and cut into matchsticks)
Instruction
- Place thinly sliced zucchini side by side on paper towels. Lightly salt to allow zucchini to sweat. Let sit for 15 minutes and pat dry with paper towels.
- Top each zucchini slice with spoonful of hummus, a few cucumber matchsticks, mint leaf, piece of chicken or turkey, and piece of avocado.
- Roll tightly up.
- Repeat with remaining ingredients.
