Ingredients

The following ingredients have 4 Servings
  • 3 cups refrigerated or frozen hash browns (thawed, patted dry)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter (melted)
  • 1/2 lb bacon (cooked, crumbled)
  • 1 shallot (diced)
  • 1 medium zucchini
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 5 eggs (room temperature)
  • 1 cup plain Greek yogurt
  • 3 cups shredded cheese ((Sharp Cheddar, Gruyere, Monterey Jack, Dubliner, Pepper Jack - a combination of 2 or more works best))

Instruction

  • Grate the zucchini onto a clean kitchen towel and squeeze dry, removing as much excess liquid as possible. Set aside.
