Ingredients
The following ingredients have 4 Servings
- 3 cups refrigerated or frozen hash browns (thawed, patted dry)
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter (melted)
- 1/2 lb bacon (cooked, crumbled)
- 1 shallot (diced)
- 1 medium zucchini
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 5 eggs (room temperature)
- 1 cup plain Greek yogurt
- 3 cups shredded cheese ((Sharp Cheddar, Gruyere, Monterey Jack, Dubliner, Pepper Jack - a combination of 2 or more works best))
Instruction
- Grate the zucchini onto a clean kitchen towel and squeeze dry, removing as much excess liquid as possible. Set aside.
