The following ingredients have 4 Servings
- 3 green zucchini
- 3 summer squash
- 1/2 red onion (thinly sliced)
- 3 carrots
- 2 cucumbers
- 1/2 cup chopped cilantro
- 1 cup sunflower seed butter
- 1 cup coconut milk
- 1 tablespoon plus 1 teaspoon coconut aminos or gluten-free soy sauce
- 2 cloves garlic (minced)
- 1/4 teaspoon salt
- 1 teaspoon crushed red pepper flakes
- 1 teaspoons rice vinegar
Instruction
- Spiralize zucchini, summer squash, carrots, and cucumbers. Add onions and cilantro and toss. Reserve until time to serve.
