Ingredients

The following ingredients have 5 Servings
  • 1 Tbs. olive oil
  • 1 pint grape tomatoes, (halved lengthwise)
  • 1 onion, (chopped, 1 cup)
  • 2 cloves garlic, (minced)
  • 3/4 tsp. kosher salt
  • 1/4 tsp. pepper
  • 1/4 cup white wine ( OR chicken broth)
  • 2 Tbs. butter
  • 1 lb. zucchini, (cut into “pasta” strands, 5 cups)
  • 1/4 cup chopped fresh basil
  • 1/4 cup shaved Parmesan cheese

Instruction

  • Heat oil in large non-stick skillet over medium-high heat.
  • Cook tomatoes, onion, garlic, kosher salt and pepper until just tender, 2-3 minutes.
  • Add wine and cook 1 minute.
  • Add butter and cook until butter is melted and a light sauce forms, 1 minute.
  • Stir in zucchini and cook until just tender, 1-2 minutes.
  • Remove from heat. Stir in basil and top with Parmesan.
