Ingredients
The following ingredients have 12 Servings
- 1 1/2 cups all-purpose flour (, or wheat flour )
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt or table salt
- 1 large egg (, whisked)
- 1 1/2 cups finely grated zucchini
- 1/2 cup oil (, vegetable or coconut oil )
- 1 teaspoon vanilla extract
Instruction
- Preheat oven to 350°F and fill a cupcake pan with liners. Set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
- Add the whisked egg, zucchini, oil and vanilla. Stir just until combined.
- Pour batter into the prepared pan until the cups are 2/3 of the way full.
- Bake for approximately 20-25 minutes, or until a toothpick comes clean.
