Ingredients

The following ingredients have 12 Servings
  • 1 1/2 cups all-purpose flour (, or wheat flour )
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt or table salt
  • 1 large egg (, whisked)
  • 1 1/2 cups finely grated zucchini
  • 1/2 cup oil (, vegetable or coconut oil )
  • 1 teaspoon vanilla extract

Instruction

  • Preheat oven to 350°F and fill a cupcake pan with liners. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
  • Add the whisked egg, zucchini, oil and vanilla. Stir just until combined.
  • Pour batter into the prepared pan until the cups are 2/3 of the way full.
  • Bake for approximately 20-25 minutes, or until a toothpick comes clean.
