Ingredients
The following ingredients have 4 Servings
- 3 zucchinis (sliced)
- ¼ cup fresh orange juice
- Cooking fat
- Sea salt and freshly ground black pepper
- 2 garlic cloves (minced)
- 1 green onion (minced)
- 1 tbsp. fresh basil (minced)
- 1 tbsp. fresh parsley (minced)
- 1 tbsp. orange zest
Instruction
- In a bowl, combine all the ingredients for the gremolata.
- Melt some cooking fat in a skillet placed over medium heat.
- Add the sliced zucchinis and season to taste.
- Saute the zucchini for 3 to 4 minutes then add in the gremolata.
- Cook for another 3 to 4 minutes before adding the orange juice.
- Continue to cook until the orange juice has completely evaporated, and serve hot.
