Ingredients

The following ingredients have 12 Servings
  • 2 zucchinis
  • 1 carrot
  • 1 onion
  • 1 tbs olive oil
  • 3 eggs
  • 1/4 cup fetta
  • 1 cup parmesan grated
  • 1 1/2 cups self-raising flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 bunch fresh dill chopped
  • 1/4 cup sour cream

Instruction

  • Preheat the oven to 180C degrees. Grease a 12 hole muffin pan, or line with paper cases.
  • Heat the olive oil in a pan and fry the onion for 2-3 minutes, followed by the grated zucchini and carrots. Cook for another 2-3 minutes and set aside to cool.
  • In a separate large bowl, whisk the eggs and sour cream.Add parmesan, grated feta, dill, salt and pepper. Combine the cooled zucchini mixture and self-raising flour and mix.
  • Spoon the batter evenly amongst the muffin paper cases and cook in the oven for 35 minutes, or until an inserted toothpick comes out clean.
