Ingredients

The following ingredients have 12 Servings
  • 2 potatoes (medium)
  • 1 brown onion (diced,small)
  • 1/2 cup corn cob kernels (fresh)
  • 1 cup zucchini (grated,tightly packed)
  • 1 cup wholemeal plain flour
  • 1 tsp baking powder
  • 1 tsp paprika (*optional)
  • 1 egg
  • 1 cup milk
  • salt and pepper (to taste)
  • 2 tbs olive oil

Instruction

  • Grate potatoes then squeeze out excess starch with your hands over the sink.
  • Place potatoes in a large mixing bowl with onion, corn, zucchini, flour, baking powder and paprika. Mix.
  • Combine egg with milk in a jug. Add to bowl with other ingredients and stir to combine. Season to taste.
  • Heat oil in a large frypan over medium heat. Drop in spoonfuls of mixture. Fry for 2-3 minutes on each side until golden. Repeat with remaining mixture.
