Ingredients

The following ingredients have 4 Servings
  • 1 1/2 lb. ground beef
  • 2 medium zucchinis (quartered and sliced)
  • 2 cups diced tomatoes
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • 1 tbsp. chili powder
  • 1/2 tbsp. paprika
  • 1 tsp. ground cumin
  • 1/4 tsp. crushed red pepper flakes
  • Cooking fat
  • Sea salt and freshly ground black pepper

Instruction

  • Melt some cooking fat in a skillet over medium-high heat.
  • Cook the garlic and onions until soft, about 5 minutes.
  • Add the ground beef and cook until browned, about 6 minutes.
  • Add tomatoes, zucchini, spices, and season to taste with salt and pepper.
  • Cover and simmer on low heat for 8 to 10 minutes.
  • Serve warm.
