Ingredients
The following ingredients have 4 Servings
- 1 1/2 lb. ground beef
- 2 medium zucchinis (quartered and sliced)
- 2 cups diced tomatoes
- 1 onion (diced)
- 2 garlic cloves (minced)
- 1 tbsp. chili powder
- 1/2 tbsp. paprika
- 1 tsp. ground cumin
- 1/4 tsp. crushed red pepper flakes
- Cooking fat
- Sea salt and freshly ground black pepper
Instruction
- Melt some cooking fat in a skillet over medium-high heat.
- Cook the garlic and onions until soft, about 5 minutes.
- Add the ground beef and cook until browned, about 6 minutes.
- Add tomatoes, zucchini, spices, and season to taste with salt and pepper.
- Cover and simmer on low heat for 8 to 10 minutes.
- Serve warm.
