Ingredients

The following ingredients have 4 Servings
  • 1/3 cup water
  • 1/3 cup granulated sugar
  • 1 - 8 ounce block cream cheese, (full fat)
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • 2 tablespoons raspberry puree, (no seeds)

Instruction

  • Create a simply syrup by combining the water and sugar in a microwave safe bowl.
  • Heat on high power for one minute.
  • Remove and stir.
  • Heat on high for 30-45 seconds until it comes to a boil.
  • Carefully remove from microwave.
  • Place block of cream cheese in large mixing bowl (with a spout, preferably).
  • Pour all but 1 tablespoon of the simple syrup over the cream cheese.
  • Beat with electric mixer until smooth.
  • Add heavy whipping cream and vanilla and blend together.
  • Stir the remaining tablespoon of simple syrup into the raspberry puree.
  • Drizzle raspberry puree into 8 zombie popsicle molds.
  • Fill the molds with the cheesecake mixture.
  • Insert the legs, making sure they are facing forward, and pop into the freezer for at least 4 hours.
  • Peel off the silicone mold before serving.
