Ingredients
The following ingredients have 4 Servings
- 1/3 cup water
- 1/3 cup granulated sugar
- 1 - 8 ounce block cream cheese, (full fat)
- 1/2 cup heavy whipping cream
- 1 teaspoon vanilla bean paste or pure vanilla extract
- 2 tablespoons raspberry puree, (no seeds)
Instruction
- Create a simply syrup by combining the water and sugar in a microwave safe bowl.
- Heat on high power for one minute.
- Remove and stir.
- Heat on high for 30-45 seconds until it comes to a boil.
- Carefully remove from microwave.
- Place block of cream cheese in large mixing bowl (with a spout, preferably).
- Pour all but 1 tablespoon of the simple syrup over the cream cheese.
- Beat with electric mixer until smooth.
- Add heavy whipping cream and vanilla and blend together.
- Stir the remaining tablespoon of simple syrup into the raspberry puree.
- Drizzle raspberry puree into 8 zombie popsicle molds.
- Fill the molds with the cheesecake mixture.
- Insert the legs, making sure they are facing forward, and pop into the freezer for at least 4 hours.
- Peel off the silicone mold before serving.
