Ingredients
The following ingredients have 8 Servings
- 1 lb ground chicken or 2 chicken breasts cut into bite size pieces
- 1 small yellow or white onion chopped
- 3 cloves garlic minced
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp creamy peanut butter
- 1 tbsp water
- 1 tbsp honey
- 2 tbsp chili garlic sauce
- 4 green onions sliced
- 8 oz can water chestnuts chopped
- 8 large butter, iceberg or romaine lettuce leaves
- Green onions, chopped peanuts and chili sauce for topping
Instruction
- Heat a large skillet over medium heat. Add chicken, onion, garlic, salt and pepper and cook until the chicken is nearly cooked through. In a microwave-safe bowl, combine the soy sauce, rice vinegar, sesame oil, peanut butter, water, honey and chili garlic sauce. Microwave for 30 seconds and stir until creamy. Add the liquid mixture to the chicken mixture and stir until combined. Add the green onions and water chestnuts. Cook for 3 minutes, or until heated through. Remove from heat and divide the chicken mixture between the lettuce leaves. Top with the desired toppings and serve.
