Ingredients
The following ingredients have 18 Servings
- 1 3/4 cups all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 1/2 cups milk
- 3 tablespoons vegetable oil
- 2 eggs, separated
- Assorted Yoplait Original yogurt
- desired toppings: berries, bananas, chocolate chips, chopped nuts, coconut, granola, etc.
Instruction
- To make the pancakes: In a large bowl, combine the flour, sugar, baking powder and salt.
- In another bowl (or in a large liquid measuring cup) combine the milk, vegetable oil and egg yolks. Whisk with a fork to combine and break the yolks.
- In another bowl, whip the egg whites until stiff peaks form.
- Pour the liquid into the dry ingredients and stir just until combined. The mixture will have lumps. Add about 1/4 of the egg whites to the mixture and stir to combine. Add the remaining egg whites and fold in gently.
- Preheat a large skillet or griddle. Grease as needed.
- Drop the pancake batter onto the griddle to make silver dollar sized pancakes, about 1/8 cup of batter each. Let the pancakes cook until bubbles form, then flip and continue to cook until browned and cooked through.
- To serve: Place each of the toppings in a bowl. Let each person take a few pancakes and top with a dollop of yogurt, then the desired toppings.
