- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic
- 1 lb dried yellow peas
- 4 cups vegetable or chicken stock (or water)
- 1 sprig fresh thyme
- 1 tablespoons fresh parsley
- 1 bay leaf
- 1 teaspoon salt and pepper to taste
