  • 2 teaspoon Olive Oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic
  • 1 lb dried yellow peas
  • 4 cups vegetable or chicken stock (or water)
  • 1 sprig fresh thyme
  • 1 tablespoons fresh parsley
  • 1 bay leaf
  • 1 teaspoon salt and pepper to taste
  • 1 cup diced ham (optional, see notes)
