Ingredients

The following ingredients have 4 Servings
  • 2 pounds seedless watermelon, rind removed and cut into 3/4-inch cubes
  • 2 large peaches, pitted and cut into 3/4-inch cubes
  • 2 mini cucumbers, thinly sliced (Persian cucumbers)
  • 3 tablespoons champagne or white wine vinegar (I substituted fresh lemon juice)
  • 1/4 teaspoon salt
  • 1/2 cup crumbled feta cheese (or ricotta salata or goat cheese)
  • 1 scallion, white and green part only, thinly sliced (I left this out)

Instruction

  • In a large bowl toss together all the ingredients. 
  • Let stand 10 minutes to let the flavors blend.
