Ingredients

The following ingredients have 4 Servings
  • 4 skinless Chicken breasts (trimmed)
  • 1.5 cups grated Mozzarella
  • 8 slices Pancetta
  • 2 Tbsps olive oil
  • 2.5 cups chicken stock
  • 0.25 cup cream
  • 2 cups cherry Heirloom tomato
  • 1 Sage
  • salt
  • freshly ground Black pepper

Instruction

  • Preheat the oven to 190°C(170° fan)|375F|gas 5.
  • Butterfly the chicken breasts with a sharp knife. Stuff with the mozzarella and season with salt and pepper.
  • Wrap well with the pancetta and drizzle with olive oil. Season with salt and pepper and place in a roasting tray.
  • Pour the stock around the chicken and roast for 40-45 minutes until the breasts are cooked through.
  • Remove from the oven and stir through the cream. Garnish with cherry tomatoes and sage leaves before serving.
