Ingredients
The following ingredients have 4 Servings
- 4 skinless Chicken breasts (trimmed)
- 1.5 cups grated Mozzarella
- 8 slices Pancetta
- 2 Tbsps olive oil
- 2.5 cups chicken stock
- 0.25 cup cream
- 2 cups cherry Heirloom tomato
- 1 Sage
- salt
- freshly ground Black pepper
Instruction
- Preheat the oven to 190°C(170° fan)|375F|gas 5.
- Butterfly the chicken breasts with a sharp knife. Stuff with the mozzarella and season with salt and pepper.
- Wrap well with the pancetta and drizzle with olive oil. Season with salt and pepper and place in a roasting tray.
- Pour the stock around the chicken and roast for 40-45 minutes until the breasts are cooked through.
- Remove from the oven and stir through the cream. Garnish with cherry tomatoes and sage leaves before serving.
