Ingredients

The following ingredients have 4 Servings
  • 2 lbs russet potatoes (scrubbed and cut into 1 inch cubes)
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp black pepper
  • 1.5 tsp kosher salt
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic
  • 1/4 cup yellow onion, finely diced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1.5 tsp smoked paprika
  • 1 tsp paprika
  • 1/8 tsp cayenne ((optional))
  • 4 whole tomatoes (from the can. Preferably San Marzano) + 1/4 cup of the juice from the can
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp sherry vinegar
  • 1/2 cup homemade mayo
  • 2 cloves garlic, minced
  • salt, (to taste)

  • If you are using the Oven Roasted Potato method, please *see notes and do that step first. If you are using the Air Fryer method, you can do that step after the bravas sauce as I have provided below.
