Ingredients

The following ingredients have 5 Servings
  • 1 1/2 cup of white whole wheat flour
  • 1 cup of quick cooking oats
  • 3 teaspoons of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of salt
  • 2 eggs, lightly beaten
  • 1 1/2 cups of milk
  • 6 tablespoons of coconut oil, melted
  • 2 tablespoons of brown sugar
  • 16 oz. of strawberries, quartered
  • 1/4 cup of water
  • 1/4 cup of raw sugar
  • zest from 1 lemon
  • juice from 1 lemon
  • vanilla bean from 1 Madagascar Vanilla Stalk
  • 1 tablespoon of arrowroot

Instruction

  • In a small saucepan, over medium high heat add water, raw sugar, lemon juice, lemon zest, vanilla bean, and arrowroot. Use a whisk to blend together.
  • Next add strawberries and bring to a simmer.
  • Simmer for 5 minutes or until the strawberries are softened and the sauce has thicken. Set aside.
  • In a large bowl, add white whole wheat flour, oats, baking powder, cinnamon, nutmeg, and salt.
  • In a small bowl mix together eggs, milk, coconut oil, and brown sugar.
  • Slowly add in the wet mixture to the dry mixture. Stir until combined.
  • Pour batter into waffle maker {spray with cooking spray if the waffles are sticking}
  • Close lid and cook until done. Should be crisp and browned on the outside.
  • Serve waffles with strawberry vanilla compote on top.
