Ingredients

The following ingredients have 12 Servings
  • 2 cups of white whole wheat flour
  • ½ cup of natural cane sugar
  • ½ teaspoon of baking soda
  • 1½ tablespoons of poppyseed
  • 1 teaspoon of chia seed
  • ¾ cup of coconut oil, melted
  • 1 cup of vanilla greek yogurt
  • 1 tablespoon of vanilla extract
  • ¼ teaspoon of salt
  • 2 eggs
  • 1 teaspoon of lemon zest
  • 4 tablespoons of lemon juice

Instruction

  • Preheat oven to 375º.
  • Grease a loaf pan with coconut oil.
  • In a large bowl mix, white whole wheat flour, natural cane sugar, baking soda, lemon zest, salt, poppyseeds, and chia seeds. Whisk together.
  • In a small bowl mix melted coconut oil, vanilla greek yogurt, vanilla extract, fresh lemon juice, and eggs. Whisk together.
  • Add wet ingredients to dry ingredients and mix until just combined.
  • Add batter to prepared loaf pan.
  • Bake for 40 minutes or until toothpick comes out clean.
