Ingredients

The following ingredients have 12 Servings
  • 3/4 c. Grape-Nuts cereal
  • 1 1/2 c. whole wheat flour
  • 2 tbsp. coconut palm sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 3/4 c. milk of choice (I used whole milk)
  • 2 eggs (lightly beaten)
  • 1/2 c. cream cheese (softened)
  • 4 tbsp. pure maple syrup
  • 1 tsp. vanilla
  • 1 medium apple (sliced)
  • Chopped Pecans
  • Pure maple syrup
  • Powdered sugar (optional)

Instruction

  • In a blender or food processor, process Grape-Nuts until ground into a flour like consistency.  
  • In a large bowl, combine ground cereal, flour, coconut palm sugar, baking powder, baking soda, cinnamon and salt. Add milk and eggs and stir until smooth. Let batter rest 5 minutes before using.
  • Preheat waffle iron to medium heat. Pour batter into the center of the lower grid. Close lid of waffle iron and cook for 3 1/2-4 minutes or until golden brown. Open lid carefully and remove baked waffle. Repeat with remaining batter.
  •  Spoon Sweetened Maple Cream in to a ziplock baggie & with scissors snip a small corner. Drizzle over waffle and top with apple slices, pecans, and syrup. Dust with powdered sugar if desired. Serve immediately.
