Ingredients
The following ingredients have 12 Servings
- 3/4 c. Grape-Nuts cereal
- 1 1/2 c. whole wheat flour
- 2 tbsp. coconut palm sugar
- 1 tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 3/4 c. milk of choice (I used whole milk)
- 2 eggs (lightly beaten)
- 1/2 c. cream cheese (softened)
- 4 tbsp. pure maple syrup
- 1 tsp. vanilla
- 1 medium apple (sliced)
- Chopped Pecans
- Pure maple syrup
- Powdered sugar (optional)
Instruction
- In a blender or food processor, process Grape-Nuts until ground into a flour like consistency.
- In a large bowl, combine ground cereal, flour, coconut palm sugar, baking powder, baking soda, cinnamon and salt. Add milk and eggs and stir until smooth. Let batter rest 5 minutes before using.
- Preheat waffle iron to medium heat. Pour batter into the center of the lower grid. Close lid of waffle iron and cook for 3 1/2-4 minutes or until golden brown. Open lid carefully and remove baked waffle. Repeat with remaining batter.
- Spoon Sweetened Maple Cream in to a ziplock baggie & with scissors snip a small corner. Drizzle over waffle and top with apple slices, pecans, and syrup. Dust with powdered sugar if desired. Serve immediately.
