Ingredients
The following ingredients have 4 Servings
- 3 medium-large sweet potatoes
- 25 g butter (optional)
- salt & pepper to taste
Instruction
- Preheat the oven to 200°C (Gas mark 6/400°F).
- Prick over each potato with a fork then place the potatoes in a roasting tin or oven tray.
- Bake in the oven for 30 minutes, then turn all of the potatoes.
- Return to the oven and cook for a further 15-30 minutes until soft and cooked through.
- Remove from the oven and leave for a few minutes until cool enough to handle.
- Cut each potato in half and scoop out the flesh with a spoon. Discard the skins.
- Place all of the sweet potato flesh into a bowl and mash together with the butter.
- Season to taste and serve immediately.
