Ingredients

The following ingredients have 4 Servings
  • 1 head of cauliflower (whole)
  • 1/3 cup kosher salt
  • plus 1 1/2 tsp flake salt
  • 3/4 tsp smoked paprika (optional)
  • 1 1/2 Tbsp extra virgin olive oil

Instruction

  • Preheat oven to 550 degrees F.
  • Bring a large pot of water to a boil with 1/3 cup kosher salt—enough water to just cover the cauliflower head. Add the head and boil for 12 minutes. When the cauliflower is tender, remove from the water and pat dry.
  • Place on baking sheet and rub with olive oil, salt, and paprika.
  • Place in the lower third of the oven for 23-25 minutes.
  • To serve, cut into 4 thick steaks and enjoy à la carte or with additional sauces.
