Ingredients

The following ingredients have 4 Servings
  • 0.333 cup Wild rice (long grain and wild rice mixed 50:50)
  • 1 shallot (finely chopped)
  • 1 Tbsp butter
  • 2 carrots (diced)
  • 1 Tbsp flour
  • sugar
  • 0.25 cup dry white wine
  • 2.5 cups vegetable stock
  • 1.667 cups turkey breasts (cut into 1-2 cm slices)
  • 0.875 cup cream

Instruction

  • Cook the rice according to the directions on the packet.
  • Fry the shallot in the butter, add the carrots and fry for a few minutes. Dust with the flour and season with salt, white pepper and a pinch of sugar. Add the wine and the stock, cover and simmer for around 5 min.
  • Add the meat and simmer for another 5 min. Add the cream and season to takes. Depending on the desired consistency simmer for a few more minutes or add more stock.
  • Drain the rice and add to the soup. Season to taste and serve.
