Ingredients
The following ingredients have 4 Servings
- 0.333 cup Wild rice (long grain and wild rice mixed 50:50)
- 1 shallot (finely chopped)
- 1 Tbsp butter
- 2 carrots (diced)
- 1 Tbsp flour
- sugar
- 0.25 cup dry white wine
- 2.5 cups vegetable stock
- 1.667 cups turkey breasts (cut into 1-2 cm slices)
- 0.875 cup cream
Instruction
- Cook the rice according to the directions on the packet.
- Fry the shallot in the butter, add the carrots and fry for a few minutes. Dust with the flour and season with salt, white pepper and a pinch of sugar. Add the wine and the stock, cover and simmer for around 5 min.
- Add the meat and simmer for another 5 min. Add the cream and season to takes. Depending on the desired consistency simmer for a few more minutes or add more stock.
- Drain the rice and add to the soup. Season to taste and serve.
