Ingredients

The following ingredients have 4 Servings
  • 21 ozs coley Fish
  • 4 small Leeks
  • 0.5 tsp Ginger garlic salt (or garlic salt mixed with a little ground ginger)
  • 2 Tbsps light soy sauce
  • salt
  • freshly ground Black pepper
  • Nutmeg
  • 0.667 cup sweet Corn (kernels)
  • 1 Lime (juice)
  • 3 Tbsps sesame oil
  • 0.875 cup fish stock
  • 0.25 cup cream (30% fat)

Instruction

  • Trim and wash the leeks and cut into rings. Dry the coley fillet, cut into strips and season with ginger and garlic salt. Drain the sweetcorn. Heat 1 tbsp sesame oil in a wok or frying pan and quickly stir-fry the leeks. Season with salt, pepper and nutmeg, take out of the wok and keep warm. Heat the rest of the oil and quickly fry the fish on all sides. Add the leeks, sweetcorn, fish stock and cream and cook gently for 2 minutes. Add soy sauce and lime juice to taste.
