Ingredients
The following ingredients have 4 Servings
- 4 ears corn; kernels removed
- 2-15 oz . cans black beans; drained and rinsed
- 1-4 oz . can green chilies
- 1 tsp . chili powder
- Juice of one lime
- 1 tbsp . fresh cilantro; chopped plus more for garnish
- Salt/pepper to taste
- Queso fresco ((optional))
Instruction
- Remove the kernels from the cob and blanch them for 5 minutes in salted boiling water.
- In a sauté pan, add the freshly blanched corn, black beans, green chilies, chili powder, lime juice, cilantro, and salt and pepper. Mix well.
- Garnish with queso fresco and cilantro. Serve.
