Ingredients

The following ingredients have 4 Servings
  • 4 ears corn; kernels removed
  • 2-15 oz . cans black beans; drained and rinsed
  • 1-4 oz . can green chilies
  • 1 tsp . chili powder
  • Juice of one lime
  • 1 tbsp . fresh cilantro; chopped plus more for garnish
  • Salt/pepper to taste
  • Queso fresco ((optional))

Instruction

  • Remove the kernels from the cob and blanch them for 5 minutes in salted boiling water. 
  • In a sauté pan, add the freshly blanched corn, black beans, green chilies, chili powder, lime juice, cilantro, and salt and pepper.  Mix well.
  • Garnish with queso fresco and cilantro.  Serve.
