Ingredients

The following ingredients have 12 Servings
  • 2 cups self-raising flour
  • 2/3 cup caster sugar
  • 2/3 cup white chocolate chips
  • 1 egg
  • 3/4 cup buttermilk
  • 125 g butter melted
  • 1 tsp vanilla essence
  • 1 cup frozen raspberries
  • 1/2 cup icing *to decorate

Instruction

  • Grease a 12-hole muffin pan and preheat oven to 190C.
  • Combine flour, sugar, chocolate and raspberries in a large bowl.
  • Combine egg, buttermilk, melted butter and vanilla, and stir into flour mix.
  • Spoon mixture into pan. Bake for approximately 20 minutes.
  • Turn out onto wire rack to cool and dust with icing sugar.
