Ingredients
The following ingredients have 20 Servings
- 125 gram unsalted butter, softened
- 1/2 cup caster sugar
- 1 egg
- 1 1/4 cup plain flour
- 1/4 cup self-raising flour
- 1 teaspoon baking soda
- 1/2 cup buttermilk
- 100 gram white eating chocolate, grated coarsely
- 2 tablespoon passionfruit pulp
- 2 tablespoon icing sugar
- 2 egg whites
- 2/3 cup caster sugar
- 1 tablespoon glucose syrup
- 2 tablespoon passionfruit juice
- yellow food colouring
Instruction
- Preheat oven to 200°C/400°F. Grease oven trays; line with baking paper.
- Beat butter, caster sugar and egg in a small bowl with an electric mixer until light and fluffy. Beat in sifted dry ingredients and buttermilk, on low speed, until smooth. Stir in chocolate and passionfruit.
- Drop level tablespoons of mixture about 5cm apart onto trays.
- Bake pies about 10 minutes. Cool on trays.
- Meanwhile, make passionfruit marshmallow filling as recipe directs (see below).
- Spoon marshmallow filling into a piping bag fitted with a 2cm fluted tube. Pipe filling on flat side of half the cooled pies; sandwich with remaining pies. Serve dusted with sifted icing sugar.
- Place ingredients in a medium heatproof bowl set over a medium saucepan of simmering water (do not allow water to touch base of bowl). Whisk vigorously about 10 minutes or until thick and creamy.
- Remove from heat; transfer mixture to a large heatproof bowl. Beat with an electric mixer, on high speed, about 5 minutes or until mixture is thick and holds its shape.
