Ingredients

The following ingredients have 6 Servings
  • 1 Onion (diced)
  • 1 Tablespoon Oil (may use less)
  • 1 Jalapeno (finely diced (optional))
  • 1 lb. Ground Turkey
  • 2 teaspoons Chili Powder
  • 2 teaspoons Cumin Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • (2) 4 ounce cans Green Chilies
  • (2) 15 oz cans White Cannellini or Great Northern Beans (in seasoning)
  • (2) 14.5 oz. cans Chicken Broth (29 ounces total)
  • 2 cups Monterey Jack or Pepper Jack Cheese (shredded)
  • Avocado (diced)
  • Cilantro
  • Jalapeno
  • Sour Cream
  • Corn Chips

Instruction

  • Heat large skillet or pot over medium-high heat. Add oil, onion, and jalapeno, if you are using. Saute for 4-5 minutes until onion starts to become tender. Add ground turkey and cook for 7-8 minutes or until turkey starts to become golden brown.
  • Add chili powder, cumin, salt, and pepper. Stir to coat turkey.
  • Reduce heat to medium-low.
  • Stir in green chilies, beans, and chicken broth.
  • Simmer for 10-15 minutes or until onions are soft.
  • Stir in 1 1/2 cups of cheese, reserving 1/2 cup for garnish.
  • Check for seasoning.
  • Ladle into soup bowls and top with remaining cheese, avocado, cilantro, and sour cream.
