Ingredients
The following ingredients have 6 Servings
- 1 Onion (diced)
- 1 Tablespoon Oil (may use less)
- 1 Jalapeno (finely diced (optional))
- 1 lb. Ground Turkey
- 2 teaspoons Chili Powder
- 2 teaspoons Cumin Powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- (2) 4 ounce cans Green Chilies
- (2) 15 oz cans White Cannellini or Great Northern Beans (in seasoning)
- (2) 14.5 oz. cans Chicken Broth (29 ounces total)
- 2 cups Monterey Jack or Pepper Jack Cheese (shredded)
- Avocado (diced)
- Cilantro
- Jalapeno
- Sour Cream
- Corn Chips
Instruction
- Heat large skillet or pot over medium-high heat. Add oil, onion, and jalapeno, if you are using. Saute for 4-5 minutes until onion starts to become tender. Add ground turkey and cook for 7-8 minutes or until turkey starts to become golden brown.
- Add chili powder, cumin, salt, and pepper. Stir to coat turkey.
- Reduce heat to medium-low.
- Stir in green chilies, beans, and chicken broth.
- Simmer for 10-15 minutes or until onions are soft.
- Stir in 1 1/2 cups of cheese, reserving 1/2 cup for garnish.
- Check for seasoning.
- Ladle into soup bowls and top with remaining cheese, avocado, cilantro, and sour cream.
