Ingredients
The following ingredients have 4 Servings
- 1.5 cups dried White bean
- 1 onion
- 2 garlic cloves
- 4 Tbsps olive oil
- 2 cups Chicken broth
- 4 sprigs thyme
- 2 Tbsps Crème fraiche
- salt
- White pepper
Instruction
- Soak the beans overnight.
- Peel and finely chop the onion and garlic. Saute in 1 tbsp of hot oil.
- Pour in the broth. Add the drained beans and 3 thyme sprigs. Cook until soft, stirring occasionally (approximately 45 minutes).
- Drain the beans. Collect the broth by placing a bowl underneath.
- Remove the thyme sprigs.
- Press the beans through a sieve.
- Stir in the creme fraiche, 2 tbsp of oil and enough broth to form a creamy puree.
- Season with salt and pepper to taste. Drizzle the remaining olive oil over the top.
- Remove the leaves from the remaining thyme sprig and use as garnish.
