Ingredients

The following ingredients have 4 Servings
  • 1.5 cups dried White bean
  • 1 onion
  • 2 garlic cloves
  • 4 Tbsps olive oil
  • 2 cups Chicken broth
  • 4 sprigs thyme
  • 2 Tbsps Crème fraiche
  • salt
  • White pepper

Instruction

  • Soak the beans overnight.
  • Peel and finely chop the onion and garlic. Saute in 1 tbsp of hot oil.
  • Pour in the broth. Add the drained beans and 3 thyme sprigs. Cook until soft, stirring occasionally (approximately 45 minutes).
  • Drain the beans. Collect the broth by placing a bowl underneath.
  • Remove the thyme sprigs.
  • Press the beans through a sieve.
  • Stir in the creme fraiche, 2 tbsp of oil and enough broth to form a creamy puree.
  • Season with salt and pepper to taste. Drizzle the remaining olive oil over the top.
  • Remove the leaves from the remaining thyme sprig and use as garnish.
