Ingredients
The following ingredients have 9 Servings
- 30 ounces white beans (rinsed and drained 2 standard-sized cans)
- 2 1/2 cups chopped cucumbers
- 2 1/2 cups halved cherry tomatoes
- 1 large red onion (chopped)
- 2 teaspoons chopped fresh parsley
- 2 teaspoons chopped fresh basil
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
Instruction
- Rinse and drain the white beans and add them to a large bowl.
- Add the cucumbers, tomatoes, and red onion, along with the fresh herbs.
- Add the olive oil and the lemon juice and toss everything together well.
- Serve, or store in the fridge for a few hours until ready to serve.
