Ingredients

The following ingredients have 9 Servings
  • 30 ounces white beans (rinsed and drained 2 standard-sized cans)
  • 2 1/2 cups chopped cucumbers
  • 2 1/2 cups halved cherry tomatoes
  • 1 large red onion (chopped)
  • 2 teaspoons chopped fresh parsley
  • 2 teaspoons chopped fresh basil
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice

Instruction

  • Rinse and drain the white beans and add them to a large bowl.
  • Add the cucumbers, tomatoes, and red onion, along with the fresh herbs.
  • Add the olive oil and the lemon juice and toss everything together well.
  • Serve, or store in the fridge for a few hours until ready to serve.
