Ingredients

The following ingredients have 4 Servings
  • 1 cup frozen peaches (sliced)
  • 1 large onion (thinly sliced)
  • 1¾ lbs boneless skinless chicken breast
  • ¾ cups barbecue sauce
  • ¼ cup apple cider vinegar
  • 1 tbsp adobo sauce
  • 1 tbsp chipotle peppers in adobo sauce (minced)
  • 1 tsp salt
  • 16 slider rolls (toasted)
  • 2 cups coleslaw ((optional))

Instruction

  • In a large slow cooker, add peaches and onions.
  • Place chicken breast on top.
  • Using a glass measuring cup, add barbecue sauce and vinegar. Whisk in adobo sauce, and chipotle pepper.
  • Pour the sauce mix on top of the chicken.
  • Cover slow cooker and set to low setting.
  • Cook 6 to 7 hours.
  • Using a shredding claws, or 2 forks, shred the chicken while still in the slow cooker.
  • Stir in the salt.
  • Place chicken on slider rolls and (optional) top with coleslaw.
