Ingredients

The following ingredients have 4 Servings
  • 3 pounds (about 18) plum tomatoes (cut lengthwise in 4ths)
  • 1 large vidalia onions (halved lengthwise, then sliced crosswise)
  • 1 tablespoon balsamic vinegar
  • 3 cloves garlic (minced)
  • salt (to taste)
  • ground black pepper (to taste)

Instruction

  • Preheat oven to 375° F.
  • Prepare 2 large non-sticking baking pans by spraying with olive oil flavored non-stick cooking spray.
  • On the prepared pans, place the plum tomatoes and vidalia onions in a single layer.
  • Season with balsamic vinegar, minced garlic, salt, and pepper.
  • Spray plum tomatoes and vidalia onions with olive oil flavored non-stick cooking spray lightly.
  • In preheated oven, roast approximately 50 to 55 minutes, or until the plum tomatoes, and vidalia onions are lightly browned. NOTE: If the pans are placed one above the other on different oven racks, switch them halfway through cooking.
  • In a food processor, add the mixture, and pulse until chunky but combined.
