Ingredients
The following ingredients have 4 Servings
- 2 cans (14.5 ounces) petite diced tomatoes
- 2 cups reduced sodium tomato-vegetable juice, such as V-8
- 1 red bell pepper, diced
- 1 English cucumber, diced
- 1 jalapeno pepper, ribs and seeds removed, minced
- 1 cup minced red onion
- 1 tablespoon sherry vinegar
- 1/4 teaspoon salt
Instruction
- Put all the ingredients in a large bowl and stir to combine.
- Cover and refrigerate until chilled, about 4 hours.
- Taste and adjust seasonings, adding more salt, pepper and vinegar, as necessary, before serving
