Ingredients

The following ingredients have 4 Servings
  • 2 cans (14.5 ounces) petite diced tomatoes
  • 2 cups reduced sodium tomato-vegetable juice, such as V-8
  • 1 red bell pepper, diced
  • 1 English cucumber, diced
  • 1 jalapeno pepper, ribs and seeds removed, minced
  • 1 cup minced red onion
  • 1 tablespoon sherry vinegar
  • 1/4 teaspoon salt

Instruction

  • Put all the ingredients in a large bowl and stir to combine.
  • Cover and refrigerate until chilled, about 4 hours.
  • Taste and adjust seasonings, adding more salt, pepper and vinegar, as necessary, before serving
