Ingredients

The following ingredients have 4 Servings
  • 1 cup rolled oats
  • 2½ cups all-purpose flour
  • ¼ tsp salt
  • 1 tsp pumpkin pie spice
  • 1½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • 4 tsp baking powder
  • 1⅓ cups light brown sugar
  • 2 tbsp butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup apple butter
  • 15 oz canned pumpkin
  • 1 cup walnuts (chopped)

Instruction

  • Preheat oven to 375° F
  • Prepare Two baking sheets by spraying with non-stick cooking spray.
  • In a large mixing bowl, add oats, flour, salt, pumpkin pie spice, cinnamon, ginger, nutmeg, and baking powder. Mix well.
  • Using a large mixing bowl, or electric mixer, add brown sugar and butter. Beat until smooth.
  • Add in 1 of the eggs. Beat until smooth.
  • Add 2nd egg and vanilla. Beat until blended
  • Add apple butter and pumpkin. Beat until smooth.
  • Add in the prepared flour mixture Blend until just incorporated.
  • Fold in walnuts until evenly mixed in.
  • Drop by spoonfuls onto the prepared baking sheets approx 2 inches apart.
  • In preheated oven, bake approx 12 minutes or until the edges of the cookies are golden.
  • Cool on baking sheets for approx 1 minute and then move the cookies to a wire rack to finish cooling.
