Ingredients

The following ingredients have 4 Servings
  • 4 cups pumpkin puree
  • 1 cup onion (chopped)
  • 1 clove garlic (minced)
  • ½ tsp fresh thyme (chopped)
  • 6 cups chicken stock
  • 5 whole black peppercorns
  • 1½ tsp salt
  • ½ cup heavy whipping cream

Instruction

  • In a stock pot, add pumpkin, onion, garlic, thyme, chicken stock, peppercorn, and salt.
  • Bring to a boil
  • Reduce heat and simmer uncovered for 30 minutes.
  • In a food processor, puree soup one cup at a time.
  • Return the soup to the stock pot. Bring to a boil.
  • Reduce heat and simmer, uncovered for 30 minutes.
  • Add heavy cream. Stir to mix
  • Serve
