Ingredients
The following ingredients have 4 Servings
- 3 cups shredded potatoes
- ¾ cups low-fat shredded cheddar cheese
- 3 ozs canadian bacon (chopped)
- ½ cup green onions (sliced)
- 4 eggs (beaten)
- 10 ozs non-fat evaporated milk
- salt (to taste)
- black pepper (to taste)
Instruction
- Preheat oven to 350°F.
- Prepare an 8x8 inch baking dish by spraying with non-stick cooking spray.
- In prepared baking dish, place shredded potatoes on the bottom in an even layer.
- Sprinkle the shredded cheddar cheese on top of the potatoes.
- Top cheese with canadian bacon and green onions.
- In a large mixing bowl, add eggs, milk, salt, and pepper. Using a whisk, whisk until combined well.
- Pour the egg mixture on top of the casserole, and spread to an even layer.
- In preheated oven, bake, uncovered for approximately 40 minutes, or until the center is set.
- Before cutting, let rest for 5 minutes.
