Ingredients

The following ingredients have 4 Servings
  • nonstick cooking spray
  • 6 ounces frozen chopped spinach (thawed and drained)
  • 1 cup ricotta cheese
  • 2 tablespoon sour cream
  • ½ cup shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • 4 eggs
  • ¼ cup milk
  • 2 tablespoon dried parsley
  • ¼ teaspoon hot pepper sauce
  • 1 teaspoon cumin
  • ½ teaspoon lemon pepper
  • ¼ teaspoon ground black pepper
  • 3 tablespoon salsa

Instruction

  • Preheat oven to 375° F.
  • Prepare a muffin tin by coating with non-stick cooking spray.
  • In a medium sized mixing bowl, add spinach, ricotta cheese, sour cream, shredded cheddar cheese, and grated parmesan cheese. Stir to mix well.
  • In a small sized mixing bowl, add eggs, milk, dried parsley, hot pepper sauce, cumin, lemon pepper, and black pepper. Stir to mix well.
  • Add the mixture in the small bowl, into the mixture in the medium bowl. Stir to mix well.
  • In prepared muffin tin, spoon mixture in 12 muffin cups in equal amounts.
  • In preheated oven, bake approximately 20 - 25 minutes, or until fully set.
  • Remove from oven and let rest in muffin tin for 5 minutes.
  • Serve with salsa.
