Ingredients
The following ingredients have 4 Servings
- 1 lb ground beef - extra lean
- 1 cup onion (chopped)
- 14 oz diced tomatoes (drained)
- 1½ cups frozen corn
- 15½ oz black beans (drained and rinsed)
- 1 tsp crushed chile
- 1 cup fat-free sour cream
- ½ cup low-fat cheddar cheese (shredded)
Instruction
- In a large skillet, brown ground beef and onion until cooked.
- Stir in black beans, corn, chilies, and tomatoes. Reduce heat and simmer for 10 minutes. Stir occasionally.
- Stir in sour cream. Simmer an additional 10 minutes. Stir occasionally.
- For serving, top with cheese.
