Ingredients

The following ingredients have 4 Servings
  • 1 lb ground beef - extra lean
  • 1 cup onion (chopped)
  • 14 oz diced tomatoes (drained)
  • 1½ cups frozen corn
  • 15½ oz black beans (drained and rinsed)
  • 1 tsp crushed chile
  • 1 cup fat-free sour cream
  • ½ cup low-fat cheddar cheese (shredded)

Instruction

  • In a large skillet, brown ground beef and onion until cooked.
  • Stir in black beans, corn, chilies, and tomatoes. Reduce heat and simmer for 10 minutes. Stir occasionally.
  • Stir in sour cream. Simmer an additional 10 minutes. Stir occasionally.
  • For serving, top with cheese.
