Ingredients

The following ingredients have 6 Servings
  • 2 cups canned chickpeas, rinsed and drained
  • 1-2 garlic cloves, or to taste, finely minced
  • 3 tablespoons, thinly sliced scallions
  • 1/2 large sweet red bell pepper, diced
  • 1/2 cup diced English cucumber
  • 2 tablespoons fresh, finely minced parsley
  • 9 large black or green olives, pitted and roughly chopped
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon lemon zest, for garnish (optional)

Instruction

  • In a medium bowl, place the chickpeas, garlic, scallions, red bell pepper, cucumber, parsley, olives, and feta cheese. Gently stir to combine.
  • In a small bowl, whisk together the lemon juice and olive oil and then pour over the chickpea mixture.
  • Season to taste with salt and pepper.
  • Cover and place in the refrigerator for at least 30 minutes to give the flavors a chance to meld.
  • Garnish with lemon zest and serve.
