Ingredients
The following ingredients have 6 Servings
- 2 cups canned chickpeas, rinsed and drained
- 1-2 garlic cloves, or to taste, finely minced
- 3 tablespoons, thinly sliced scallions
- 1/2 large sweet red bell pepper, diced
- 1/2 cup diced English cucumber
- 2 tablespoons fresh, finely minced parsley
- 9 large black or green olives, pitted and roughly chopped
- 1/2 cup crumbled feta cheese
- 3 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1 teaspoon lemon zest, for garnish (optional)
Instruction
- In a medium bowl, place the chickpeas, garlic, scallions, red bell pepper, cucumber, parsley, olives, and feta cheese. Gently stir to combine.
- In a small bowl, whisk together the lemon juice and olive oil and then pour over the chickpea mixture.
- Season to taste with salt and pepper.
- Cover and place in the refrigerator for at least 30 minutes to give the flavors a chance to meld.
- Garnish with lemon zest and serve.
