Ingredients

The following ingredients have 4 Servings
  • 2 small apples (peeled & shredded)
  • 1 cup quick oats
  • 1½ cups all-purpose flour
  • ½ tsp baking soda
  • 1½ tsp baking powder
  • ⅔ cup packed brown sugar
  • ½ tsp cinnamon
  • ½ tsp salt
  • ½ cup milk
  • 2 tbsp vegetable oil

Instruction

  • Preheat oven to 375 degrees F. 
  • Line muffin pan with cupcake liners. Set aside.
  • In a mixing bowl, combine apples, oats, flour, baking soda, baking powder, brown sugar, cinnamon, salt, milk and oil.
  • Spoon batter into cupcake liners.
  • Bake approx 15 to 18 minutes or until a toothpick inserted into center comes out clean.
  • Leave in muffin tin to cool for approx 5 minutes.
  • Place on cooling rack to cool.
