Ingredients

The following ingredients have 3 Servings
  • 3 c. watermelon juice (divided (from about 3 lbs. watermelon))
  • 1/2 c. granulated sugar
  • pinch salt
  • 1 Tbs. fresh lime juice
  • 2 Tbs. semisweet mini chocolate chips

Instruction

  • In a small pot, heat 1/2 c. of watermelon juice, sugar, and salt. Heat, stirring occasionally, until sugar has dissolved. Remove from heat and pour into a large bowl containing the remaining watermelon juice. Stir in lime juice.
  • Allow to cool until room temperature.
  • Pour into popsicle molds and add a few mini chocolate chips to each popsicle, before putting in the stick.
  • Freeze for at least 6 hours, until very firm.
