Ingredients

The following ingredients have 1 Servings
  • 8 cups Seedless Watermelon cut into 3/4-1 inch sized pieces
  • 4 ounces Baby Arugula
  • 1/4 cup thinly sliced Red Onion

  • 2 tablespoons Balsamic Glaze
  • a handful of Fresh Mint Leaves, for garnish
  • Salt and Pepper, to taste
  • 3/4 cup Balsamic Vinegar
  • 1 tablespoon Brown Sugar

Instruction

  • Wash and dry the outside of the watermelon.
  • Then, using a sharp knife, cut the watermelon into pieces on a cutting board, using only the red portions. Discard the rind. Alternatively, use a melon baller to cut the watermelon into round balls.
  • Then, combine the watermelon pieces with the baby arugula, red onion, and feta cheese in a large serving bowl.
  • Drizzle the salad with the balsamic glaze and garnish with fresh mint leaves.
  • Season to taste with salt and pepper if desired.
  • Combine the balsamic vinegar with the brown sugar in a small saucepan. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to medium-low, and continue cooking for 5-7 minutes, or until the balsamic vinegar has reduced to about 1/4 cup.
  • Let cool completely.
