Ingredients
The following ingredients have 1 Servings
- 8 cups Seedless Watermelon cut into 3/4-1 inch sized pieces
- 4 ounces Baby Arugula
- 1/4 cup thinly sliced Red Onion
- 7 ounces Crumbled Feta Cheese
- 2 tablespoons Balsamic Glaze
- a handful of Fresh Mint Leaves, for garnish
- Salt and Pepper, to taste
- 3/4 cup Balsamic Vinegar
- 1 tablespoon Brown Sugar
Instruction
- Wash and dry the outside of the watermelon.
- Then, using a sharp knife, cut the watermelon into pieces on a cutting board, using only the red portions. Discard the rind. Alternatively, use a melon baller to cut the watermelon into round balls.
- Then, combine the watermelon pieces with the baby arugula, red onion, and feta cheese in a large serving bowl.
- Drizzle the salad with the balsamic glaze and garnish with fresh mint leaves.
- Season to taste with salt and pepper if desired.
- Combine the balsamic vinegar with the brown sugar in a small saucepan. Stir to combine.
- Bring the mixture to a boil, then reduce heat to medium-low, and continue cooking for 5-7 minutes, or until the balsamic vinegar has reduced to about 1/4 cup.
- Let cool completely.
