Ingredients

The following ingredients have 4 Servings
  • 0.6 pound cubed seedless watermelon (300 g, chilled)
  • 1/4 cup fresh mint leaves (packed, plus more for garnishing)
  • 4 tablespoons granulated sugar
  • 1/2 cup freshly squeezed lime juice
  • 8 fluid ounce white rum (1 cup)
  • 8 lime rounds
  • chilled club soda (as required)
  • ice cubes (as required)

Instruction

  • Add watermelon cubes to the large jar of a blender or a food processor and blend until smooth. Don’t bother if the watermelon has a few seeds. We are going to strain the juice anyway.
  • Strain the juice through a fine-mesh strainer in a bowl or a pitcher. Press with the back of a ladle to get maximum juice. Discard the pulp. Straining the juice gives a clear drink. Set aside.
  • Add mint leaves to a large pitcher and muddle them using a muddler or the back of a wooden spoon. Add sugar and lime juice to the pitcher and stir until the sugar is dissolved.
  • Stir in the white rum and watermelon juice.
  • Take 4 tall serving glasses and add 2-3 ice cubes, 2 lime rounds and 2-3 mint leaves to each of them.
  • Fill half of the glasses with the watermelon juice mixture and then top with club soda. Garnish with a watermelon slice and mint leaves. Serve watermelon mojito immediately!
