Ingredients
The following ingredients have 2 Servings
- 4 ounces baby spring greens
- 1 cup watermelon
- 1/4 cup pine nuts
- 1/4 cup feta cheese
- 1 cup grilled chicken, chopped or shredded
- 3 tablespoons lime juice
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1/2 teaspoon minced garlic
- 3 large mint leaves, minced
- Fresh cracked pepper
Instruction
- Place the greens in two salad bowls. Top each bowl equally with watermelon, pine nuts, feta cheese and grilled chicken.
- To make the vinaigrette, whisk together the lime juice, honey, olive oil, garlic, fresh black pepper and mint leaves. Drizzle over the salads and serve.
