Ingredients

The following ingredients have 2 Servings
  • 4 ounces baby spring greens
  • 1 cup watermelon
  • 1/4 cup pine nuts
  • 1/4 cup feta cheese
  • 1 cup grilled chicken, chopped or shredded
  • 3 tablespoons lime juice
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1/2 teaspoon minced garlic
  • 3 large mint leaves, minced
  • Fresh cracked pepper

Instruction

  • Place the greens in two salad bowls. Top each bowl equally with watermelon, pine nuts, feta cheese and grilled chicken.
  • To make the vinaigrette, whisk together the lime juice, honey, olive oil, garlic, fresh black pepper and mint leaves. Drizzle over the salads and serve.
