Ingredients
The following ingredients have 4 Servings
- 4 Tbsps olive oil
- 4 small Sweet potato (sliced, slices halved)
- 11 ozs mixed Lettuce (e. g. oak leaf lettuce, green lettuce, rocket, torn into bite-sized pieces)
- 2 cups cherry tomatoes (halved)
- 1 small Cucumber (thinly sliced)
- 1 cup unsalted Macadamia Nuts (roughly chopped)
- 3 Tbsps balsamic vinegar
- 1 tsp salt
- 0.5 tsp Mustard
- 6 Tbsps olive oil
Instruction
- Heat the oil and fry the sweet potatoes for about 8 minutes, until golden brown.
- For the vinaigrette: mix together all the ingredients.
- Mix together the lettuce leaves, tomatoes, cucumber and hot sweet potato slices and drizzle with vinaigrette. Sprinkle with the chopped macadamia nuts.
