Ingredients

The following ingredients have 4 Servings
  • 4 Tbsps olive oil
  • 4 small Sweet potato (sliced, slices halved)
  • 11 ozs mixed Lettuce (e. g. oak leaf lettuce, green lettuce, rocket, torn into bite-sized pieces)
  • 2 cups cherry tomatoes (halved)
  • 1 small Cucumber (thinly sliced)
  • 1 cup unsalted Macadamia Nuts (roughly chopped)
  • 3 Tbsps balsamic vinegar
  • 1 tsp salt
  • 0.5 tsp Mustard
  • 6 Tbsps olive oil

Instruction

  • Heat the oil and fry the sweet potatoes for about 8 minutes, until golden brown.
  • For the vinaigrette: mix together all the ingredients.
  • Mix together the lettuce leaves, tomatoes, cucumber and hot sweet potato slices and drizzle with vinaigrette. Sprinkle with the chopped macadamia nuts.
