- 6 green onions (plus oil and salt, as needed)
- 2 tbsp sherry vinegar
- 1 tbsp Dijon mustard
- ½ tsp Worcestershire sauce
- ½ cup safflower oil (or other neutral oil)
- 1 tbsp bacon fat (from the drippings)
- 1 tbsp fresh lemon juice
- 1 tbsp fresh oregano, chopped
- ½ tsp kosher salt
- freshly cracked black pepper
- 2 lbs multi-colored fingerling potatoes
