- • Sharp White Cheddar, shredded (optional)
- • 1/3 cup olive oil, divided
- • 3/4 cup finely chopped white or yellow onion
- • 1 cup Pale Ale (I used Mission ST. India Pale Ale)
- • 1/4 cup apple cider vinegar
- • 2 tablespoons German or Dijon mustard
- • 2 garlic cloves, finely chopped
- • 1-2 teaspoons sugar
- • Salt and freshly ground black pepper to taste
