Ingredients

The following ingredients have 4 Servings
  • 4 cups Kale
  • 4 slices Bacon (cooked until crispy and then crumbled into smaller pieces.)
  • 4 slices Provolone
  • 1 large sweet onion (sliced)
  • 1 lb mushrooms (your choice sliced thinly)
  • 2 tablespoons champagne vinegar
  • 1 tsp sugar
  • 2 tablespoons butter
  • Black pepper (to taste)

Instruction

  • Wash and dry kale- set aside
  • In a skillet, heat butter (med heat), and add onions and mushrooms-cook for 3 mins
  • Add in vinegar, sugar, and salt
  • Pan-fry until onions are translucent
  • Cook bacon until crispy- crumble into smaller pieces
  • Cut 4 slices of provolone into little pieces
  • Plate kale in 4 plates
  • Top with warm veggies, bacon, and cheese
  • Enjoy warm!
