The following ingredients have 16 Servings
- BASE:
- 1 cup(s) flour
- 2 tablespoon(s) brown sugar
- 1/2 cup(s) butter,softened
- FILLING:
- 1 cup(s) walnuts, chopped
- 1 cup(s) brown sugar
- 1/2 cup(s) unsweetened coconut
- 2 tablespoon(s) flour
- 2 large eggs, lightly beaten
- 1 teaspoon(s) vanilla
- ICING:
- 4 ounce(s) cream cheese, at room temperature
- 1/4 cup(s) butter, at room temperature
- 3/4 cup(s) melted white chocolate (6 oz.)
- 1/4 cup(s) powdered sugar
- 1 tablespoon(s) lemon juice
Instruction
- Lightly grease a 9-inch square cake pan. Set aside. Preheat oven to 325^. Base: Work together the ingredients for the base in a food processor, to make fine crumbs. Press into the prepared baking pan and bake for about 15 minutes. Test with tooth pick.
- Filling: Stir together the filling ingredients. When the base comes out of the oven, spread this over top, return to the oven, and bake until set, about 25 minutes. Cool completely on a rack.
- Icing: Beat the cream cheese, butter and melted chocolate until smooth. Gradually beat in the powdered sugar, and lastly the lemon juice. Chill until spreadable, about 10 minutes. Spread the icing over the cooled walnut filling and cut into diamonds.
