Ingredients
The following ingredients have 4 Servings
- 250g rice vermicelli noodles
- 2 tbs peanut oil
- 1 red onion, thinly sliced
- 2 garlic cloves, finely chopped
- 1 tsp grated ginger
- 1-2 tbs green curry paste, depending on how hot you like it
- ½ tsp ground turmeric
- 11/2 cups (375ml) chicken stock
- 1 cup (250ml) coconut milk
- 2 tsp brown sugar
- 500g green prawns, peeled, deveined, tails intact
- Steamed broccolini, to serve
- Lime wedges, to serve
Instruction
- Prepare noodles according to packet instructions. Heat oil in wok over medium high heat. Add onion, garlic, ginger, curry paste and turmeric. Stir-fry for 1-2 minutes. Add stock, coconut milk and sugar. Bring to a simmer. Add prawns, then cook over medium heat for 5 minutes. Serve with noodles, greens and lime.
