Ingredients

The following ingredients have 4 Servings
  • 250g rice vermicelli noodles
  • 2 tbs peanut oil
  • 1 red onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1 tsp grated ginger
  • 1-2 tbs green curry paste, depending on how hot you like it
  • ½ tsp ground turmeric
  • 11/2 cups (375ml) chicken stock
  • 1 cup (250ml) coconut milk
  • 2 tsp brown sugar
  • 500g green prawns, peeled, deveined, tails intact
  • Steamed broccolini, to serve
  • Lime wedges, to serve

Instruction

  • Prepare noodles according to packet instructions. Heat oil in wok over medium high heat. Add onion, garlic, ginger, curry paste and turmeric. Stir-fry for 1-2 minutes. Add stock, coconut milk and sugar. Bring to a simmer. Add prawns, then cook over medium heat for 5 minutes. Serve with noodles, greens and lime.
